Developing a menu for any event is a reflection of how well the event concept has been defined. And what a great challenge TEDx Adelaide 2016 Metamorphosis theme presented in terms of food!
When we think of food we reach into our minds and engage our senses, we think of what we have tried in the past, we think of aromas and taste. This is where inspiration started. Let’s take our locally sourced produce, well known South Australian dishes and break apart elements to recreate new-old dishes. And with that roadmap, menu design started.
Ideas were developed and brainstormed on paper and in the kitchen, but not every idea worked. I tested some of the ideas and they were just plain bad – but that also became part of the experience. Remember, there is no single source for ideas, and in order to come to that place where ideas just flow, one needs to explore and try as much as one can.
Over the course of few months, the menu started to shape, setting the mood through colours, textures and feelings. As a result, each dish is influenced by South Australian heritage and each dish have a distinct story. Cooking at its most basic level is a creative art of transforming produce into dishes, through application of heat and other ingredients. But in the end, final dishes on the menu are about sharing, about honesty. And it is about identity. A change of the form into a completely different one.
